My go-to recipe for Mashed Cauliflower will win over even the biggest cauliflower haters.

This plant-based mash is a delicious side dish you can enjoy all year round, but it can also be the perfect addition to your holiday menu.

Cauliflower is one of my favorite vegetables. It’s super healthy, versatile and delicious. Okay, you may not think it’s delicious, but please give this recipe a try, you might actually change your mind. This mashed cauliflower is buttery (no butter, though), creamy, light and so damn good! I added a few spices and a little coconut milk and the end result tastes beyond amazing.

I’ve been making this recipe for the past 5 or 6 years, I like the blend of flavors so much I haven’t felt the need to try another combination.

I love the addition of aromatics like onions and garlic, the delicate sweetness from the coconut milk and the subtle hint of spices. It’s scrumptious and super healthy. This mashed cauliflower is vegan, paleo and keto. Better yet, it’s full of health benefits. Mashed cauliflower

Mashed Cauliflower

Fluffy, nourishing and incredibly delicious Mashed Cauliflower. A full of goodness side dish everyone will love.

Servings 3 - 4

Ingredients
  

  • 1.3 pounds or 600 grams of cauliflower, roughly chopped*
  • 1 medium yellow onion, roughly chopped
  • 2 big garlic cloves, roughly chopped
  • cup + 1 Tbsp coconut milk, warm
  • 3 Tbsp olive oil
  • 1 tsp apple cider vinegar
  • 1 tsp sea salt
  • ¼ tsp ground turmeric
  • ¼ tsp ground coriander
  • tsp ground cinnamon
  • Black pepper to taste

Instructions
 

  • Add 2 inches of water to a large pot. Place a steamer basket into the pot. Bring water to a boil over high heat. Once it’s boiling, reduce heat to medium and add the cauliflower, onion and garlic cloves to the steamer basket. Cover with a lid. Steam until the cauliflower pieces are tender. About 10 – 15 minutes, depending on the size of the florets.
  • Add steamed cauliflower, onion, garlic cloves, coconut milk, olive oil, apple cider vinegar, sea salt, turmeric, coriander, cinnamon and black pepper to a food processor. Blend until smooth and creamy. Taste and adjust seasonings.
  • Serve immediately and enjoy!
  • You can make this in advance, store it in an air-tight container in the fridge and warm it up later.

*You can use the whole cauliflower: florets and stems.
