Nutrient Packed Pesto

This is a great crowd-pleasing pesto recipe. It’s easy to make, vegan and filled with delicious wholesome ingredients. It pairs incredibly well with pretty much everything, from pasta to veggies. So Yum!
Servings 1 Cup

Ingredients
  

PESTO:

  • cup walnuts
  • 2 Tbsp pumpkin seeds
  • 1 cup spinach
  • ¾ cup basil leaves
  • 1 big clove of garlic
  • 2 Tbsp lemon juice
  • ½ cup olive oil
  • ½ tsp sea salt
  • 1 Tbsp nutritional yeast, optional

TO SERVE:

  • Whole-grain farro pasta (or your pasta of choice)
  • Sun-dried tomatoes
  • Toasted pine nuts

Instructions
 

  • Place all ingredients in a high-speed blender (or food processor) and blend until creamy.
  • Serve with your pasta of choice and add your favorite toppings.
  • Enjoy!
