Nutrient Packed Pesto
This is a great crowd-pleasing pesto recipe. It’s easy to make, vegan and filled with delicious wholesome ingredients. It pairs incredibly well with pretty much everything, from pasta to veggies. So Yum!
PESTO:
- ⅓ cup walnuts
- 2 Tbsp pumpkin seeds
- 1 cup spinach
- ¾ cup basil leaves
- 1 big clove of garlic
- 2 Tbsp lemon juice
- ½ cup olive oil
- ½ tsp sea salt
- 1 Tbsp nutritional yeast, optional
TO SERVE:
- Whole-grain farro pasta (or your pasta of choice)
- Sun-dried tomatoes
- Toasted pine nuts
