Carrot Cake Smoothie

Creamy, sweet and nourishing carrot cake smoothie. This is a delicious vegan version of your favorite carrot cake, minus all the unhealthy stuff. And trust me, it tastes like cake; like a truly delicious carrot cake in a glass full of yummy goodness.

Ingredients
  

  • 1 big carrot, steamed and frozen*
  • ½ big banana, frozen
  • 2 Tbsp oats
  • 1 Tbsp coconut nectar or maple syrup
  • 3 big walnuts
  • ½ tsp pure vanilla extract
  • ¼ tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/8 tsp ground ginger
  • ½ tsp lemon zest
  • 1 cup unsweetened almond milk

Instructions
 

  • Add all ingredients to a high-speed blender and blend until smooth and creamy.
  • Enjoy!

Notes

* Slice the carrot, steam until tender. Cool down and freeze for at least 6-8 hours. The next time you are steaming some veggies, add an extra carrot so you can make this incredibly tasty smoothie.
