Peanut Butter and Chocolate Truffles

Deep chocolatey-nutty flavor and a smooth, fudgy texture! You’ll fall in love with these rich and decadent Peanut Butter and Chocolate Truffles. These heavenly bites are vegan, refined sugar-free, GF, super nutritious and so incredibly delicious.

Ingredients
  

  • ½ cup smooth peanut butter
  • ¼ cup oat flour - use gluten-free if necessary
  • 3 Tbsp cacao powder
  • 3 Tbsp coconut nectar or maple syrup
  • 1 tsp pure vanilla extract
  • 3 Tbsp toasted peanuts

Instructions
 

  • Add peanuts to a blender or food processor and blend until coarsely ground. Transfer to a small bowl and set aside.
  • Combine peanut butter, coconut nectar and vanilla extract in a medium bowl. Whisk until combined.
  • Add oat flour and cacao powder and mix until well combined. The dough should be slightly firm and form easily when squeezed between your fingers. If it's too soft and sticky add more oat flour, one tablespoon at a time.
  • Roll into 10-12 balls. And then roll each ball in peanut crumbs.
  • Enjoy!
  • Store leftovers in an airtight container in the fridge for up to a week (or freeze them for up to a month). They have a fudgier texture at room temperature, so I like to take them out of the fridge 15 minutes before eating them.
