Favorite Apple Cider Vinaigrette
Tangy, light, nutritious and super easy dressing. Oh, and incredibly delicious too! Perfect for fresh, vibrant salads.
- ¼ Cup + 1 Tbsp olive oil
- 3 Tbsp apple cider vinegar
- 1 Tbsp lemon juice
- 2 tsp Dijon mustard
- 2 tsp coconut nectar or maple syrup
- 1 clove of garlic
- 1 Tbsp chopped chives, optional (but so good!)
Place all ingredients, except chives, in a high-speed blender and blend for a few seconds, until smooth and creamy. Add chives, if using, and stir with a spoon.
Store in an airtight container in the fridge for up to a week.
